Dairy - Cheese Making Technician

Objective:

ACTA in cooperation with the American Farm School , created the innovative, by Greek standards, certification Certified Dairy Technologist - Cheesemaker . This is the only certification that ensures the professional level of formal and essential qualifications of its holder in the field of Cheese-making at the level of adult training.

The CDTC certifies, inter alia, that the candidate is able to:

 

  • Prepares and executes the production based on the production program, the recipes and the general and special instructions that apply to each product.

  • Participates in the Quality Assurance system.

  • Takes care of the good use and maintenance of the production equipment that is under his responsibility

  • Prepares and performs special cheese production processes

  • Performs the physical and partly accounting management of raw materials, packaging materials, intermediates and finished products, using the appropriate equipment for transfusions, transport and recording (computerization, barcoding, RFID).

  • Participates in the administrative and educational functions of the production sector as well as in the system of occupational safety and health.

Who is this course for

The CDTC is aimed at those who wish to acquire knowledge, skills and competencies related to cheese-making, such as raw material producers, food technologists or holders of a degree in geotechnical, biological and chemical sciences.

The Course comprises the following sections:​

  • General dairy - cheese

  • Special dairy

  • Special cheese-making

Examination Methodology:

Candidates are evaluated in two phases of examination process, theoretical and practical. The successful completion of both phases of the examination process leads to the acquisition of certification.

For those who want to be certified on the field:

In our offices we offer the actual examinations for the certification of Internal Auditor which is accredited by the Hellenic Accreditation System E.SY.D. and it is thereby recognized throughout Europe.
